Commercial Kitchen Fire Prevention and Hood Cleaning
Exhaust cleaning removes fuel from the one part of a kitchen no one can see into. It is a large part of fire prevention, but it is not the whole of it — here is how the pieces fit.
The fuel, and where it sits
A cook line has ignition sources by design. The variable an operator controls is how much fuel sits above and behind them. Grease deposits in the plenum, duct and fan are combustible, continuous, and enclosed in metal that carries flame away from the kitchen and toward the roof. Removing that deposit on a sensible interval is the single most direct prevention measure available. See how grease builds up in an exhaust system for where it collects.
The layers around it
- Filters in place, every service. A missing or warped filter is an open path to the duct. Baffle filters must be listed for the application and seated with no gaps.
- Fire suppression, serviced by a licensed contractor. Nozzles must actually cover the appliances as currently arranged. Moving a fryer without moving the nozzle quietly voids that coverage. This is a separate trade from cleaning.
- Portable extinguishers. Class K on the line, in date, and staff who know where they are.
- Duct access panels. A run that cannot be opened cannot be cleaned or inspected. Adding panels is a permanent improvement, not a recurring cost.
- Fan condition. A seized hinge, a loaded blade or a failing belt reduces exhaust and raises heat over the line. See exhaust fan cleaning.
- Documentation. Dated cleaning reports demonstrate the interval you claim to keep — to the inspector and, after an incident, to the insurer.
Daily habits that matter more than they look
- Pull and wash filters on a fixed rota rather than when someone notices.
- Wipe the canopy and capture edges at close; do not let film harden.
- Never operate the line with a filter missing to “improve airflow.”
- Keep combustibles — boxes, towels, paper — off and away from the cook line.
- Report a hood that stops pulling. Reduced airflow is an early failure signal.
- Empty and clean grease troughs and cups before they overflow onto the appliance.
Setting the interval honestly
The right frequency follows how a kitchen cooks. Solid-fuel and heavy charbroil lines load fastest; high-volume fry lines are next; low-volume bake and steam kitchens are slowest.
